- 1 cup of fresh cranberries
- 2 cups of whole wheat flour
- 3/4 tsp of baking soda
- 3/4 tsp of baking powder
- 1/4 tsp of salt
- 1 large orange zest
- 2 tbsp of avocado oil
- 1 large egg
- 2 tsp of vanilla extract
- 3 tbsp of maple syrup
- 1 cup of plain Greek yogourt
- 1/4 cup of orange juice 1/2 cup of milk
- Any kind of nuts to add texture
- ✋🏻Keep the cranberries aside.
- 🥣Whisk together dry ingredients (including orange zest) in one bowl.
- 🥣In another bowl, mix the wet ingredients, except the milk.
- 🥣Add the liquid ingredients to the dry ingredients and mix well.
- 🥛Incorporate the milk slowly.
- 🥄Then gently fold the cranberries and nuts (I used walnuts) into the batter.
- ♨️Oven to 350•F for 17-20 minutes
- 🔅Healthy muffins always have different textures than those found in stores / restaurants.
That’s why I love to slice them into pieces and put them in a toaster.
