- 1 3\4 cup of whole wheat flour
- 1 1\2 tsp of baking powder
- 1 tsp of cinnamon
- 1\2 tsp of baking soda
- 1\2 tsp of salt
- 1 cup of grated apple
- 1 cup of apple diced into small cubes
- 1\2 cup of maple syrup
- 1\3 cup of melted coconut oil
- 2 eggs
- 1\2 cup plain Greek yogurt
- 1\2 cup of apple sauce
- 1 tsp of vanilla extract
- Chopped walnuts
- 🥣In a large bowl, combine the dry ingredients and blend well. Add the grated and chopped apple.
- 🥣In a medium bowl, combine the oil and maple syrup and beat together with a whisk.
- Add the eggs and beat well, then add the yogourt, the apple sauce and vanilla.
- 🥄Put the wet ingredients into the dry and mix until combined. Add the walnuts into the batter and keep some to sprinkle on the top of the muffins.
- ♨️Bake for 13-15 minutes (425 degrees).
- 🍮Sea salt caramel:
- 1 cup of dates
- 1 cup of milk
- 1 tsp of vanilla extract
- 1\2 tsp of sea salt
- Blend for 3-5 minutes
