I had posted this recipe a couple months ago, but those muffins are some of our favorites and they are so easy to bake.
- 1/2 c. low-fat cottage cheese
- 2 eggs
- 1 1/2 c. whole wheat flour
- 1/2 tsp. of salt
- 2 1/2 tsp. baking powder
- 3 tbs. of maple syrup
- 2/3 c. milk (I use 1%)
- 1 1/2 c. fresh blueberries
- Any kind of nuts.
Blend the cottage cheese, eggs and maple syrup together. Add flour, salt and baking powder. Add milk and stir lightly. Then gently stir in the blueberries and the nuts.
➕ Spoon into 12 muffin cups and bake at 425 degrees for 15-18 min.
Healthy muffins tend to be a little more bland than other popular muffins. To add a little bit of « punch » in them, be sure to add some nuts, such as almonds or walnuts. I also like to toast them just before I eat them. ☺️ Enjoye your Sunday!
