Ingredients :
- Sliced boiled eggs
- Diced tomatoes
- Chopped blanched asparagus (Put them in boiling water for about 2-4 minutes, then submerge them in ice cold water)
- Salt + Pepper
- You can add any vegetables of your choice (red peppers, green onions, etc.)
Vinaigrette :
Mix together :
- 2 tbs vegetable or avocado oil
- 1\3 cup apple juice
- 1 tbs honey
- 1\3 cup whole grain mustard
- 1\3 cup white wine vinegar
- Salt + Pepper
Put all the salad ingredients together, except the eggs. Drizzle a little bit of the vinaigrette, to taste. Don’t put the whole vinaigrette on the salad.
Stir everything together.
Finally, add the sliced boiled eggs (I like to add them at the end because otherwise the egg yolks break, providing less aesthetically pleasing results).
