- 2 larges bananas
- 1\4 c. maple syrup or honey
- 1\2 c. Greek yogurt (plain)
- 1 egg
- 1\3 c. milk
- 2 tsp vanilla
- 3\4 c. peanut butter
- 1 + 3\4 c. flour
- 1 tsp. cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1\4 tsp salt
- Crushed almonds (sprinkle on top)
Mix the bananas (mashed), maple syrup (or honey), yogurt, egg, milk, vanilla and peanut butter in a bowl. In another bowl, mix remaining ingredients (dry ingredients). Then add the liquid ingredients to the dry ingredients and stir well. Once the mixture is put into a muffin pan, sprinkle with sliced (or crushed) almonds.
Bake at 375 for 15-18 minutes.
